|
This study concerns an industrial enzyme-producing fermentation process. The bacterium Leuconostoc mesenteroides grows in a sucrose-containing medium to produce dextransucrase, an extracellular enzyme used to convert sucrose to dextran. This microbially produced biopolymer has unique properties of medicinal use.
